Bromelain

Bromelain is an enzyme found in pineapple that breaks down proteins. It is responsible for the prickly sensation or irritation some people feel on their tongue after eating large quantities of pineapple.

Examples:

  • After eating a whole pineapple, I experienced a tingling sensation due to the bromelain content.
  • Chefs often use bromelain to tenderize meat because of its protein-digesting properties.

Pineapple tongue

A colloquial term referring to the slight irritation or burning sensation on the tongue and mouth caused by the acidity and proteolytic enzymes in fresh pineapple.

Examples:

  • She loved the taste of fresh pineapple but always got a 'pineapple tongue' after eating too much.
  • The 'pineapple tongue' effect makes it hard to enjoy the fruit in large quantities.
